March is always a fun month in our family. With green glitter and shamrocks everywhere, we celebrate our daughter’s half-birthday on St.Patrick’s Day. Her most requested item is the Chocolate Guinness Cake with Bailey’s cream cheese frosting. This recipe is my go-to chocolate cake. Easy to make, turned out great every time, and always a crowd favorite!

Chocolate Guinness Cake with Irish cream cheese frosting
Ingredients
- butter for pan
- 1 cup Guinness stout
- 10 Tbsp unsalted butter
- ¾ cup unsweetened cocoa
- 2 cup superfine sugar will find named Caster or Bakers Sugar
- ¾ cup sour cream
- 2 large eggs
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- 2 ½ tsp baking soda
- pinch of salt
Frosting
- 1 ¼ cups confectioners sugar
- 8 oz cream cheese, room temperature
- ¼ cup heavy cream
- ¼ cup Irish Cream
- green food dye, optional at least 5 drop for deep emerald green
Instructions
Chocolate Guinness Cake
- Heat oven to 350 degrees. Butter a 2 9-inch cake pan and line it bottom with parchment paper.
- In a large saucepan, combine Guinness and butter. Place over medium-low heat until butter melts, then remove from heat.
- Add cocoa and superfine sugar, and whisk to blend. In a small bowl, combine sour cream, eggs, and vanilla; mix well. Add to Guinness mixture.Add flour and baking soda, and whisk again until smooth.
- Pour into a buttered pan, and bake until risen and firm, 30 - 35 minutes. Place pan on a wire rack and cool completely in pan. Remove the cake from the pan and place it on a platter or cake stand.
Irish cream cheese frosting
- Using a stand mixer or by hand, mix confectioners' sugar to break up lumps. Add cream cheese and blend until smooth. Add Irish cream & heavy cream, mix until smooth and spreadable.
