This October, I had an opportunity to work with Kirkwood Lifestyle Magazine to create fun seasonal-themed recipes. This is one of them, and since making it, the reviews have been outstanding. What I do love about this recipe is the apple onion marmalade that is the base that can be used versatility across your holiday table. Add to a roast or steak, use it as stuffing for a turkey, put it on a sandwich, and bake it with some brie; the options are endless.
The key to this marmalade is the slow and low cooking of the onions. We use medium-low heat to transform the aromatic bulb into a sweet caramelized state. Hope you enjoy!

Roasted Apple, Onion Marmalade, Gruyere Tart
Ingredients
Roasted Apple Onion Marmalade
- 3 Tbsp olive oil thinly sliced
- 3 medium onions thinly sliced
- ¼ teaspoon crushed red pepper
- ¼ cup dark brown sugar
- ¼ cup apple cider vinegar
- ¼ cup dry sherry or 1 Tbsp balsamic vinegar
- 3 medium apples cored, quartered, & sliced
- 5 sprigs thyme
Tart
- 1 sheet puff pastry
- 1 egg with 1 Tbsp water
- ½ cup shredded aged gruyere cheese
- ¼ cup chopped pecans
- 2 Tbsp chopped chives
- 1 honey drizzle over the top
Instructions
- In a large saute pan, heat up oil over medium high heat. Add onions and a few pinches of salt and cook until onions are cooked for about 10 minutes. Turn down the heat to medium and cook until the onions are reduced and caramelized, about 20 minutes. Stir occasionally to reduce burning.
- Add in the crushed red pepper, sugar, vinegar, sherry, and a pinch or two of salt. Cook for about 15 minutes.
- Then add in the apples, and thyme, stirring occasionally. Cook for about 15 more minutes. Onions should be caramalized and jammy and apples al dente. Remove thyme sprigs.
- Preheat the oven to 400F. Unfold the thawed puff pastry on a piece of parchment paper. Roll the pastry, just a bit to form a longer rectangle., about 9x 13. Fold ½ inch around the perimeter of the rectangle to form a crust. With a pastry brush, brush the egg mixture over the crust.
- Sprinkle gruyere cheese on the bottom of the crust. Then spread over the top of the gruyere the apple onion marmalade. Place in the oven and cook for about 30 - 40 minutes until the crust is golden brown.
- Sprinkle the top with pecan and chives. Drizzle the honey over top and ready for service.
